This is such a simple recipe and so easy to do if you’re short on time. The herby flavours of the pesto compliment the salmon brilliantly. Serve with Brown basmati rice if eaten after a workout or you can serve with quinoa and mixed vegetables.
Salmon Fillet (one per person)
1 tablespoon of pesto
Tablespoon of coconut oil
1. Preheat the oven to 180c or gas mark 4
2. Grease a baking tray with the coconut oil and place the Salmon fillets on the tray. Spread the Pesto across the top evenly
3. Bake in the oven for around 15-18minutes
serve with salad, vegetables or rice
