Chicken Satay Wrap

Sometimes you just need to spice up a plain old Chicken Wrap and what better way than with some spicy peanut butter. Does require you to make your own satay sauce, but it’s well worth it and you can use it as dipping sauce with your snacks on other days. Bonus!

Small wholemeal wrap
1 cooked chicken breast, skinned and cut into strips
Handful of iceberg lettuce
slices of cucumber

Dipping Sauce (simply mix all together and refrigerate)
2 tbsp of natural yogurt
2 tbsp of peanut butter
1 clove of garlic crushed
1 tsp fresh ginger grated
1 tsp mild red chilli, deseeded and finely chopped
1 tsp lemon juice
2tsp fresh coriander leaves, chopped
1 spring onion finely chopped

Cooking Instructions
1. Heat the wraps in a dry frying pan for a couple of minutes each side to lightly toast them
2. Spread the satay sauce sauce in the middle of each wrap and place the chicken and salad on top
3. Fold both sides of the wrap into the middle and tuck the end in.
4. Devour!
